Easy Taco Soup

If you’ve been around here for a while, you know that my family loves Mexican food! Taco Tuesday often turns into Burrito Thursday or Enchilada Saturday because everyone enjoys eating tex-mex style, or at least can make a meal of chips & salsa!

This easy taco soup is perfect to toss in the Crock-Pot and then arrive home to after a busy day. It’s simple to double and freeze the extra batch or pass it on to a friend or neighbor.

This simple and hearty soup cooks up perfectly in the crock pot and freezes well. This easy taco soup, made in the slow cooker, gives a whole new spin on Taco Tuesday! Beans, cheese, tomatoes, and corn join with spices to create a delicious, satisfying meal even the kids will love!

The simplicity of this recipe makes me almost feel bad calling it cooking…it’s seriously emptying things into a crockpot and then spooning into a bowl to eat. But it’s so delicious, you’ll thank me for sharing it, trust me, friends, it’s perfect to serve to guests or family, it’ll be our little secret about the lack of cooking skills required.

I didn’t photograph all the steps because I’m running on the assumption that opening cans and slicing cheese isn’t a huge chore you’d need visuals for, m’kay? so without further adieu, here ya’ go:

Serves: 14
Ingredients
  • 2 lbs. browned ground beef or turkey
  • 3 cans of drained beans(I use black bc they're our fave, pinto works, too)
  • 3 cans of Ro*Tel
  • 2 cans of corn(drained)
  • 2.5 T Taco Seasoning
  • 1.5 tsp. cumin
  • ½ tsp. red pepper flakes
  • 64 oz Velveeta, diced into cubes
  • Topping:
  • Sour cream, chips, fresh diced tomato, cilantro
Instructions
  1. Place everything in the crockpot except the Velveeta, stir to combine, then add Velveeta. Cook on low for 5-6 hours. Serve and top with your family's favorites. We prefer corn chips vs. tortilla chips on our because they mix in so well.

Yes, there’s Velveeta involved….don’t freak out, it’s not like ya’ eat it everyday. If you stick regular cheese in there, it comes out weird, don’t risk it. This soup is pretty much a taco in a bowl and very thick. If you prefer a more soupy consistency, don’t drain the beans or corn, add water until it’s the thinness you desire.

That’s it, delicious goodness is on it’s way to your table but be warned, people love this soup, you’ll be bringing it to every potluck and gathering forever!

Ever wonder what to say when your child is feeling Ever wonder what to say when your child is feeling left out?  A few years ago, I watched from my park bench as a young mother tried to console her sobbing daughter. “I’m sorry, honey. I don’t blame you for being upset.”  “I don’t know why they won’t let me be in their group for the talent show. They just said they already had enough people and their routine was done and there wasn’t anything they could do about it. I told them I would make a new one up, but they wouldn’t do it.”  I tried to focus on my kindle while occasionally looking for my kids to exit the school door. But as much as I tried not to eavesdrop, I had to admit I was interested to hear how the mom would handle this all-too-common situation of a child feeling left out.  “Well, they’re probably just jealous of you honey, because you are such a good gymnast and they aren’t. They probably don’t want you in their group because you’ll show them up,” the mom stated matter-of-factly. “You should do a solo routine. Or maybe one with Chloe.”  “You think?” the girl replied, her tears slowing down. “You think they’re just jealous of my tumbling?”  “Totally.”  Several minutes passed before my girls came out, but the interaction between the mother and daughter stuck with me for a lot longer.
