Egg Nog Cupcakes with Egg Nog Buttercream Frosting

Egg Nog Cupcakes with Egg Nog Buttercream Frosting

 

Preheat the oven to 350 degrees and line two muffin tins with cupcakes liners.  Then here’s what you’ll need for the cupcakes:

Eggnog Cupcake with Eggnog Buttercream Frosting

1 1/2 cups flour
1 cup sugar
1/4 tsp baking soda
1/2 tsp baking power
1/4 tsp salt
1/2 cup coconut oil melted (you can also use vegetable oil)
1 1/4 cup Southern Comfort Egg Nog

Yes, I’m being specific about the kind of eggnog. I will always tell you if I’m being paid to promote a specific product and in this instance I’m totally NOT. I just love this stuff and it has such a rich flavor that you can actually do without some of the typical Egg Nog ingredients like Vanilla, Nutmeg and Cinnamon. However, if you are using a regular Egg Nog, then you’ll want to add these in and the measurements are below. (Or you might be like me and put them in anyway, because I am slightly addicted to these ingredients and tend to like a more intense flavor)

If using regular Egg Nog, add the following extra ingredients to the batter.
1 tsp vanilla
1/2 tsp nutmeg
1/2 tsp cinnamon
Eggnog Cupcake with Eggnog Buttercream Frosting

Start by mixing your dry ingredients (this would include the cinnamon and nutmeg if you are including) in a bowl together with a whisk. Next add in the oil (and vanilla if including) and mix on medium speed with an electric mixer. Add in the Egg Nog slowly continuing to mix on medium speed for about 2 minutes. You’ll notice there are NO EGGS in this recipe, you don’t need them because of the egg nog. Please don’t be tempted to add them in or your cupcakes might not turn out as tasty as they should.

Fill the cupcake liners about 3/4 full with the batter and then place in the oven to bake for about twenty minutes. They should just be slightly golden brown on top and a toothpick inserted in the middle should come out cleanly. While the cupcakes are baking, prepare the frosting.

Frosting:

1/2 cup butter
2 cups powdered sugar
1 tsp vanilla
2 Tbsp Egg Nog
1/2 tsp nutmeg
1/2 tsp cinnamon

Cream the butter using an electric mixer (or a stand mixer) until fluffy. Next add in the powdered sugar 1/2 cup at a time. Lastly, add in the vanilla, nutmeg, cinnamon and Egg Nog and beat on medium speed another 3-4 minutes until the frosting is the desired consistency. Once the cupcakes have cooled, using a decorating piping bag and tip or just a regular spatula to frost.  Sprinkle just a little additional nutmeg on top of the frosting (I grated the fresh nutmeg directly over the cupcake for mine).

Ingredients

    I found your blog via the My Girlish Whims link party. I clicked on your post, because I was thinking about trying to use Southern Comfort Spice Vanilla Eggnog in a recipe. I was THRILLED when I saw that that is exactly what you’d used!!!! Have been in LOVE with this stuff for about 6 yrs now!!! Excited to try these cupcakes!!! FYI it’s also DELISH as a creamer substitute for coffee!!!!

    These look incredible! We used to make homemade eggnog every year and there is nothing like it. So incredibly Delicious! We would take turns whipping the egg whites (my arm hurts thinking about it, haha)…anyway, thanks for this recipe. Definitely going to try it!

Ever wonder what to say when your child is feeling Ever wonder what to say when your child is feeling left out?  A few years ago, I watched from my park bench as a young mother tried to console her sobbing daughter. “I’m sorry, honey. I don’t blame you for being upset.”  “I don’t know why they won’t let me be in their group for the talent show. They just said they already had enough people and their routine was done and there wasn’t anything they could do about it. I told them I would make a new one up, but they wouldn’t do it.”  I tried to focus on my kindle while occasionally looking for my kids to exit the school door. But as much as I tried not to eavesdrop, I had to admit I was interested to hear how the mom would handle this all-too-common situation of a child feeling left out.  “Well, they’re probably just jealous of you honey, because you are such a good gymnast and they aren’t. They probably don’t want you in their group because you’ll show them up,” the mom stated matter-of-factly. “You should do a solo routine. Or maybe one with Chloe.”  “You think?” the girl replied, her tears slowing down. “You think they’re just jealous of my tumbling?”  “Totally.”  Several minutes passed before my girls came out, but the interaction between the mother and daughter stuck with me for a lot longer.
