Slow Cooker Raspberry Sriracha Pork Chops

I don’t know about you, but I can get really tired of the same old rotation of meals we serve in this household. I mean a person can only eat so much spaghetti. BUT considering how C-R-A-Z-Y my life can get, coming up with new ideas for dinner is almost too stressful and I like things uncomplicated. That was why when I tried out this new super simple slow cooker recipe, I KNEW I had to share it ASAP!!!  I kid you not, five minutes prep, put it in the slow cooker and you’re done! WhoooHooo!

So, here’s what you need:

6-8 bone-in pork chops
1 jar Bon Maman Raspberry Preserves (or any brand you prefer, this one just has a good strong flavor)
1/2 tsp Sriracha (more if you like it on the spicier side, but for my kiddos this was perfect)
Salt
Pepper
Garlic Powder (optional)

Directions:
Lay the pork chops on a plate or a baking tray and sprinkle both sides of all the chops with salt, pepper and garlic powder. In a small bowl, mix together the jar of preserves and the 1/2 tsp of Sriracha. Pour about 1/3 of the preserves and sriracha mixture into the bottom of your slow cooker, place 2-3 pork chops in the slow cooker and then cover those with another 1/3 of the preserve mixture. Place the remaining pork chops in the slow cooker and cover with the remaining preserve mixture. Cook on low for 4-6 hours and serve. See, I told you it was easy!

Ingredients

  6. Cook on low for 4-6 hours and serve.

    Oooh, Bon Maman is my favorite jam brand! I will admit, I would never have thought to combine raspberry and sriracha on a pork chop, but you’ve got my wheels turning. Looks super simple, and slow cooking is a must lately with work being so crazy!

    I’m usually not a fan of pork, but this looks amazing! I looove sriracha and adding it to pork is just brilliant. Slow cooker meals are definitely starting to be in season with the heat coming.

    You had me with sriracha! I love a good slow cooker recipe. I made some slow cooker meatballs using grape jelly, but this sounds interesting adding that extra kick! I know I will be trying this!

    I love Sriracha and slow cooker recipes, so this one looks like one to try. The raspberry has to be killer with the heat added from Sriracha!

A few years ago, I watched from my park bench as a young mother tried to console her sobbing daughter. “I’m sorry, honey. I don’t blame you for being upset.”  “I don’t know why they won’t let me be in their group for the talent show. They just said they already had enough people and their routine was done and there wasn’t anything they could do about it. I told them I would make a new one up, but they wouldn’t do it.”  I tried to focus on my kindle while occasionally looking for my kids to exit the school door. But as much as I tried not to eavesdrop, I had to admit I was interested to hear how the mom would handle this all-too-common situation of a child feeling left out.  “Well, they’re probably just jealous of you honey, because you are such a good gymnast and they aren’t. They probably don’t want you in their group because you’ll show them up,” the mom stated matter-of-factly. “You should do a solo routine. Or maybe one with Chloe.”  “You think?” the girl replied, her tears slowing down. “You think they’re just jealous of my tumbling?”  “Totally.”  Several minutes passed before my girls came out, but the interaction between the mother and daughter stuck with me for a lot longer.
