Using a mixer, in a medium bowl, beat together the butter and sugar until fluffy.
Add in the vanilla and almond extract and then beat in one egg at a time on medium speed until combined.
Next mix in the baking soda and baking powder and one cup of flour using a wooden spoon or spatula.
Add in the remaining flour one cup at a time, mixing together as you go.
On a flat surface (I used a large wooden cutting board) sprinkle with flour and then take half the dough and roll-out to about 1/4 -1/2 inch think using a rolling pin.
Using a circle cookie cutter or the rim of a glass, cut-out individual cookies and place them on a greased cookie sheet or one lined with parchment paper.
If you want a more traditional sugar cookie, sprinkle the cookies with a little additional sugar before placing them in the oven.
