So, we’ve got turkey burgers and NOT fried chicken to give healthy twists to tried and true favorites. I’ve also included a Bonus Recipe Suggestion from the Snappy Gourmet, that comes with an added extra “Pop”. Easy BBQ Chicken
Ingredients:
1 1/2 lbs split chicken breasts
1 (18 oz.) bottle Kraft barbeque sauce
Directions:
Skin and wash chicken pieces, if prepping ahead place chicken pieces in a ziploc bag with BBQ sauce and let marinate in the fridge for a few hours. When ready to cook, place in a baking pan lined with aluminum foil. If not marinated in advance, simply place chicken pieces directly into baking dish lined with aluminum foil and pour barbeque sauce evenly over chicken. Bake on lower rack in oven at 325 degrees for 1 hour or until chicken is tender. avocado and papaya salad below. Remove the chicken from the bone of the remaining breasts, place in a freezer safe bag or container and freeze for use in the Day 5 recipe.
INGREDIENTS
2 limes, juiced
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon freshly cracked black pepper
4 cups mixed baby lettuce greens
2 papayas
2 avocados
Directions:
Combine the lime juice, honey, salt and pepper; blend until smooth. Peel the papayas and cut them in half. Using a spoon, remove the seeds; discard seeds. Slice the papaya halves into thin wedges. Cut the avocados in half and remove the pits. Slice the flesh into thin strips. Arrange the fruit slices on salad plates, alternating between papaya and avocado. Combine the greens and dressing in a bowl and toss well to coat. Mound a portion of the greens in the center of each plate. Drizzle with a few drops of dressing.
Day 2 – Turkey Burgers w/ Avocado Salsa
Ingredients:
Salsa-
1 ripe avocado, finely chopped
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh (2 tsp dried) cilantro
1 teaspoon minced fresh garlic
1/2 tablespoon plain low-fat yogurt
1/2 small red onion, finely chopped
1 teaspoon ground cumin
Salt, to taste
Turkey Burgers
1 pound ground turkey breast
2 tablespoons fresh lemon juice
1 teaspoon minced fresh garlic
1 medium egg
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions:
Thoroughly mix all avocado salsa ingredients in a medium bowl;set aside. In another medium bowl, combine ground turkey, wheat germ, lemon juice, garlic, egg, salt, and pepper; mix well. Form mixture into four patties. Oil grill grate (or lay a piece of aluminum foil on grill) and heat.
Cook turkey burgers and red pepper quarters for about 4 minutes on each side. Remove; cut grilled red peppers into thin strips. Toss arugula or mixed greens with olive oil and lemon juice; divide among four plates. Top each with a burger and avocado salsa; garnish with grilled red pepper strips and sunflower seeds. Serve right away.

1 cup Shredded Low-Fat/ Part-Skim Mozzarella Cheese
Directions:
Day 4 – Not Fried Chicken
Ingredients:
1.25 lbs boneless skinless chicken breasts, halved length-wise (to make a thin cutlet)
1 cup whole wheat flour
1 cup non-fat or low-fat milk
1 egg
3 cups crushed corn flakes
Directions:
Preheat oven to 350 degrees. For a healthier, lower fat option you can remove the skins. Either way, rinse and pat the chicken drumsticks dry. Prepare batter by mixing milk and egg together and beating until combined, then stir in flour until thick. Add a dash of salt and pepper to taste.
Prepare corn flakes by placing in a ziplock bag and crushing with a rolling pin(or I smash the heck out of them with the back of spoon- kinda therapeutic). You do want some texture so don’t smash them up too badly. Add 1/4 tsp of salt(you can also use garlic powder or another seasoning salt like lowry’s) and mix with a fork. Place batter and crushed corn flakes in shallow bowls. Spray a cookie sheet with cooking spray or line with foil. Dip chicken pieces first in the batter, allowing the excess batter to drip off into the batter bowl, then place the battered chicken piece into the crushed corn flakes. You may have to press the chicken pieces in lightly to make sure they are coated. Flip and repeat. Place the crusted chicken pieces on the cookie sheet. Bake at 350 for about 45-60 minutes until golden and crisp.

Love your recipes, and try hard to be as healthy as we can be. Seafood risotto is a great favourite of ours, we have used Jamie Olivers Italian recipe but would love to try something a little different and healthy in the risotto line!

I’d love to see recipes that can be easily adapted to feed just two. Now that the kids are grown, I’m having to relearn how to cook! I’d also love to see ethnic recipes that do not call for too many unusual ingredients–in fact, I’d like to see more of any recipes that call for fewer ingredients.
Great suggestions. Many of the recipes I post could be divided into two meals, and you could freeze the 2nd portion for later in the month. I actually double up many of my recipes that are freezer friendly (If I’m making it, might as well make twice as much!). This gives me a few emergency meals at the ready for those nights when I’m just not up for putting together a whole meal or don’t have time. I’m also a HUGE fan of ethnic dishes, but you point out one of the major problems, they often have quite a few ingredients and use spices many people don’t have readily on hand. So, it can make the meal not so budget friendly. However, I’ve got a few ideas brewing, so keep checking back.
I cannot cook! I grew up in the South and it seemed the foods were prepared with lots of oil. I want to learn how to make a few simple meals with lots of vegetables and few calories. Also I only want to cook at first for myself and my husband. Any recommendations for someone like me would be appreciated.
Each week, I’ve been including a recipe that I also break out in a separate post that are healthier twists on old favorites. Last week I actually did the NOT fried chicken. This is a GREAT recipe and really hits the spot if you’re craving souther fried chicken without all the fat, calories and grease. I did a Mac & Cheese redo a couple of weeks ago and will keep working on others. If there are particular dishes you have in mind, just let me know and I’ll see what I can do.
I’d like to see dessert recipes using 5 ingredients or less.
Looks like I have several requests to include dessert recipes. I’ll work on incorporating at least one dessert recipe a week or creating a new weekly feature with a dessert option. I definitely LOVE dessert.

Every week I make sure there is at least one vegetarian meal and then I will even try to have a 2nd that can be modified to fit a vegetarian diet. I have lots of vegetarian friends and they’d like to see more as well. I’ll see what I can do!

Living in Florida, we’re big seafood fans. I’ve been trying to do at least one dish with seafood every other week. I’d love to do it weekly, but sometimes the sales don’t always cooperate.
I would love to see slow-cooker recipes for those days when I have to work late.
I’d also like to see more crock pot recipes..although I tend to use mine more in the cold weather…
I have been toying with the idea of more crock pot recipes, my concern is whether lots of people actually own one. However, I have a few good ones so I would expect to see some going forward.

Hey Lesley! The Healthy Meals, Happy Budget post I did today with the twice baked potatoes sounds perfect for you. It can easily be made vegetarian using the Morningstar Grillers Crumbles! They are actually really good and your hubbie might not even know they were veggie. You could also sub in broccoli or even peppers for the meat as well.

i just tried the turkey burger with guac mixture. The turkey burger was great, I did oats instead of bread it came out great. The highlight of that meal was the guac, I will adopt that mixture into all mexican dishes! I would love to see more vegetarian meals since the only type of meat we eat is turkey maybe 2 a week. I love that this site shows how to be frugal but also mindful about our world and what we put into our bodies! Good job

Tips and tricks for meals. I don’t always feel up to making dinner but want to have healthy options so we buy items in bulk like grilled chicken, separate it into 4 ziplop baggies and add seasonings and freeze. I pull out the meal I want, figure out a vegetable and a pasta, rice or potato and we have an easy dinner without a lot of thought. Another idea is to make at least 2 of whatever you are making. Eat one for dinner, and freeze one for dinner for the next week. I also pulled out my crock pot and do dinners that way.
